How to Prepare Qatayef Dough at Home

Qatayef dough:

2 Cups of Flour
½ Cup Semolina
3 Tsp Baking Powder
½ Tsp Bicarbonate of Soda
½ Cup of Sugar
2 Tspb of Powdered Milk
1 Tsp Rose Water
3 Cups of Water
5 Mastics crushed with a pinch of sugar
½ Tsp Mahlab

Method of preparing Qatayef dough:

In the jug of an electric mixer, put all the dry ingredients and mix together with a spoon.

Add rose water and water and mix with the electric mixer until the ingredients are well mixed.

In the middle of the process scrape the materials stuck on the sides inside the jug to ensure that they are dissolved in the mixture, then mix again for a couple of minutes.

Cover the mixture with a clean cloth and let it rest for 15 minutes.

Heat a non-stick frying pan over a medium heat, and start directly by pouring a little dough on the pan in a circular shape. Wait until the dough bubbles appear, which is evidence of the success of the Qatayef dough.
Never flip the other way.

When the Qatayef is ready, remove it from the pan, place on a clean cloth and cover directly with another cloth to preserve the Qatayef softness and repeat the process until the quantity is over.

Stuff them with different fillings as desired.
